Transform chicken and veggies into a smoky, keto-friendly sheet pan dinner for four. Smoked paprika-infused veggies pair perfectly with bacon-wrapped chicken.
Ingredients:
  • 1 head broccoli, cut into florets
  • 0.5 head cauliflower florets
  • 0.5 medium head red cabbage, cut into wedges
  • 0.5 cup olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon smoked paprika
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 4 boneless, skinless chicken thighs
  • 8 slices bacon
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and prepare a large baking sheet lined with aluminum foil for easy cleanup.
  • In a large bowl, mix broccoli, cauliflower, and cabbage. In a measuring cup, whisk olive oil, salt, and paprika and drizzle over the vegetables. Gently toss until well coated. Set aside.
  • Mix chili powder, cumin, and garlic powder on a plate. Coat both sides of each chicken thigh with the spice mixture. Wrap each thigh with 2 slices of bacon and arrange them in the center of a baking sheet.
  • Evenly distribute the vegetables around the chicken after giving them one final stir.
  • Roast in the oven until the bacon is crispy, chicken is fully cooked, and juices run clear, approximately 35-40 minutes or until a thermometer inserted reads 165 degrees F (74 degrees C).
