Delicious Spring salad featuring smoky bacon and creamy avocado.
Ingredients:
  • 175g shortcut bacon rashers
  • 1 large avocado, peeled, sliced
  • 1 medium tomato, cut into wedges
  • 2 green onions, thinly sliced
  • 5.90 gm American mustard
  • 2 tsp white wine vinegar
  • 36.40 gm olive oil
Instructions:
  • Preheat a frying pan over medium heat. Sear bacon for 2 minutes on each side until golden. Coarsely chop and transfer to a bowl. Mix in avocado, tomato, and onion. In a separate container, blend mustard, vinegar, and oil. Pour over the salad and toss well. Serve and enjoy!
