"Crunchy crouton salad with bacon and avocado, ready in just 30 minutes!"
Ingredients:
  • 4 thick slices bread, cut into 1.5cm cubes
  • 250g lean bacon, cut into 1cm pieces
  • 1 small iceberg lettuce
  • 1 punnet cherry tomatoes, halved
  • 2 avocados, peeled and cut into chunks
  • 56.88 gm olive oil
  • 20.00 ml red wine vinegar
  • 5.90 gm Dijon mustard
Instructions:
  • Preheat the oven to 200°C. Arrange bread cubes on a baking tray and bake for 10 minutes until golden and crispy, flipping them over halfway through.
  • Preheat a frypan over medium-high heat. Cook bacon until golden and crisp, about 3 to 4 minutes. Drain on paper towel and keep warm.
  • Tear lettuce into bite-sized pieces and arrange on 4 plates. Layer with tomatoes, avocado, bacon, and croutons. Season generously with salt and pepper.
  • Prepare the dressing by combining oil, red wine vinegar, and Dijon mustard, whisk until smooth. Drizzle the dressing over the salad and enjoy.
