Indulgent spinach salad with bacon dressing, eggs, mushrooms, cheese, and almonds. Perfect for entertaining.
Ingredients:
  • 1 (10 ounce) bag baby spinach leaves
  • 10 ounces Swiss cheese, shredded
  • 4 hard-cooked eggs, peeled and sliced
  • 1 cup sliced mushrooms
  • 4 strips crisply cooked bacon, crumbled
  • 0.5 cup toasted sliced almonds
  • 1 tablespoon olive oil
  • 1 large shallot, minced
  • 1 teaspoon garlic, minced
  • 0.33333334326744 cup white wine vinegar
  • 0.33333334326744 cup Dijon mustard
  • 0.33333334326744 cup honey
  • 2 strips crisply cooked bacon, crumbled
  • salt and pepper to taste
Instructions:
  • In a large serving bowl, layer spinach, Swiss cheese, hard-cooked eggs, mushrooms, crumbled bacon, and almonds.
  • In a small skillet, warm olive oil over medium heat. Sauté shallots and garlic until softened, around 2 minutes. Add vinegar, Dijon mustard, honey, and 2 crumbled strips of bacon; stir until heated through. Season with salt and pepper to taste.
  • Drizzle warm dressing over fresh spinach and gently mix until well coated.
