Spinach salad with warm sweet dressing, hard-boiled eggs, and bacon bits.
Ingredients:
  • 6 eggs
  • 1 pound bacon
  • 2 bunches fresh spinach, rinsed and dried
  • 4 green onions, thinly sliced
  • 2 eggs
  • 0.25 cup white sugar
  • 0.25 cup white vinegar
  • 0.25 cup red wine vinegar
Instructions:
  • Place 6 eggs in a saucepan, cover with cold water, bring to a boil, then let stand in hot water for 10-12 minutes before cooling, peeling, and chopping.
  • In a large, deep skillet, fry the bacon over medium-high heat until crispy. Remove, crumble, and set aside, saving about 1/2 cup of the bacon drippings in the skillet.
  • Combine fresh spinach and sliced green onions in a spacious bowl.
  • Warm the reserved drippings over gentle heat. Whisk together 2 eggs, sugar, white vinegar, and red wine vinegar in a small bowl. Pour the mixture into the warm drippings and whisk until thickened, approximately 1 minute.
  • Drizzle the warm dressing over the spinach, sprinkle the crumbled bacon, and toss to coat. Top it off with chopped egg for a perfect finish.
