Elevate spinach with garlic and cranberries for a tasty twist!
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 4 garlic cloves, thinly sliced
  • 1 eschalot, finely chopped
  • 62.50 gm dry white wine
  • 2 bunches English spinach, trimmed, chopped
  • 40.00 ml dried cranberries
Instructions:
  • In a large frying pan over medium-high heat, heat oil. Add garlic and cook, stirring constantly, for 2 minutes or until garlic turns just golden. Transfer garlic to a paper towel to drain using a slotted spoon.
  • Heat the pan over medium-high heat. Add shallot and cook for 3 minutes until softened. Pour in the wine and bring it to a simmer. Let it simmer for 2 minutes until reduced by half. Lastly, add the spinach and cook while stirring for 3 minutes until it just wilts.
  • Top with aromatic garlic and tangy cranberries, then generously season with salt and pepper before serving.
