Spicy sauteed spinach

"Flavorful wilted-spinach side with Indian spices like curry leaves and cumin seeds."
Ingredients:
  • 60g (1/4 cup) ghee
  • 1 large fresh red chilli, thinly sliced
  • 1 large fresh green chilli, deseeded, thinly sliced
  • 40.00 ml fresh curry leaves
  • 1 1/2 tsp black mustard seeds
  • 1 1/2 tsp cumin seeds
  • 3 bunches English spinach, stems trimmed, washed
Instructions:
  • In a large heavy-based frying pan over medium heat, sizzle the ghee. Stir in the garlic and blend in the chili mixture, cook, stirring occasionally for 1-2 minutes.
  • Sauté the curry leaves, mustard seeds, and cumin seeds for 3 minutes until fragrant and the mustard seeds start popping.
  • Toss in the spinach and cover to wilt for about 3 minutes, remember to season with salt and pepper before serving.
