Dandelion Greens with a Kick

Spicy sautéed dandelion greens with onion and garlic.
Ingredients:
  • 1 teaspoon salt
  • 1 pound dandelion greens, torn into 4-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 0.5 onion, thinly sliced
  • 0.25 teaspoon red pepper flakes
  • 2 cloves garlic, minced
  • salt and ground black pepper to taste
  • 1 tablespoon grated Parmesan cheese
Instructions:
  • In a large bowl, combine 1 teaspoon of salt with cold water. Submerge dandelion greens and let them soak for 10 minutes. Drain the greens before using.
  • In a large pot, bring water to a boil with 1 teaspoon of salt. Add greens and cook for 3 to 4 minutes until tender. Drain and rinse with cold water to chill.
  • In a large skillet over medium heat, heat olive oil and butter. Sauté onion and red pepper flakes until onion is tender, about 5 minutes. Add garlic and cook for another 30 seconds. Increase heat to medium-high, add dandelion greens, and cook until liquid evaporates, about 3 to 4 minutes. Season with salt and pepper.
  • Garnish greens with freshly grated Parmesan cheese before serving.
