Spinach, mushrooms, and egg in bacon vinaigrette for a hearty salad.
Ingredients:
  • 1 (12 ounce) package bacon
  • 1 onion, diced
  • 1 cup vegetable oil
  • 0.5 cup white vinegar
  • 0.5 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons salt
  • 1 pound fresh spinach
  • 1 (12 ounce) package sliced fresh mushrooms
  • 3 hard-boiled eggs, peeled and diced
Instructions:
  • In a large skillet over medium-high heat, cook the bacon until golden and crisp, about 10 minutes, turning occasionally. Transfer bacon to paper towels to drain, saving 1 tablespoon of bacon fat in the skillet. Crumble the bacon.
  • In a skillet, heat the reserved bacon drippings over medium heat. Cook and stir the onion in the hot drippings until slightly tender, about 5 to 10 minutes.
  • In a saucepan, mix vegetable oil, sugar, vinegar, ketchup, Worcestershire sauce, and salt. Bring to a boil, then lower heat and simmer until sugar and salt dissolve, about 5 minutes. Stir in bacon and onion, and simmer over low heat for 3 minutes until dressing is blended.
  • Combine fresh spinach, sliced mushrooms, and eggs in a spacious mixing bowl. Drizzle the flavorful dressing over the salad mixture and gently toss until well coated.
