Mouthwatering orzo salad with spinach, feta, tomatoes, and balsamic - perfect with fish or chicken.
Ingredients:
  • 1 (16 ounce) package uncooked orzo
  • 0.5 cup olive oil
  • 2 tablespoons butter
  • 0.5 teaspoon minced garlic
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon crushed red pepper flakes
  • 1 cup pine nuts
  • 1 (10 ounce) bag baby spinach
  • 0.125 cup balsamic vinegar
  • 1 (8 ounce) package crumbled feta cheese
  • 0.5 fresh tomato, chopped
  • salt to taste
Instructions:
  • Boil a pot of salted water. Cook pasta for 8 to 10 minutes until al dente. Drain and transfer to a mixing bowl.
  • In a large skillet over medium-high heat, heat olive oil and butter until sizzling. Add garlic, basil, and red pepper flakes, then lower the heat to medium. Toss in pine nuts and sauté until golden. Add spinach, cover, and simmer gently for 5 minutes until wilted. Serve and enjoy!
  • Combine spinach mixture with orzo pasta. Serve on plates, drizzle with balsamic vinegar, and sprinkle with crumbled feta cheese and chopped tomatoes. Let guests season to taste with salt. Enjoy!
