Elegant sugar cookie crust layered with Anjou pears and a rich brown butter topping for a delicious dessert.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1 tablespoon Gold Medal™ all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 3/4 cup unsalted butter
  • 2 Anjou pears, peeled, thinly sliced
  • 3 eggs
  • 3/4 cup sugar
  • 1/3 cup plus 1 tablespoon Gold Medal™ all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons vanilla
Instructions:
  • Preheat the oven to 350°F and lightly coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Combine the cookie mix and 1 tablespoon of flour in a large bowl. Mix in 1/2 cup of softened butter and 1 egg until a soft dough forms. Press the dough evenly in the bottom of a baking dish.
  • Bake for 10 to 15 minutes until the dough is set and has a light, golden brown edge. Allow it to cool.
  • In a 1-quart saucepan over medium heat, melt 3/4 cup butter until it turns a deep golden brown. Stir constantly for about 5 minutes, being cautious as it can brown quickly. Remove from heat and pour the brown butter into a glass measuring cup to cool slightly.
  • Once the butter has cooled, arrange the sliced pears in a single layer on top of the cooled cookie crust.
  • In a large bowl, whisk together the remaining Topping ingredients until smooth. Gradually mix in the brown butter until smooth, then pour the mixture evenly over the pears.
  • Bake for 40 to 45 minutes until deep golden brown and a toothpick inserted in the center comes out clean. Allow to cool completely on a cooling rack for about 1 hour, then slice into 12 pieces using a sharp knife.
