Choc pear puddings

Decadent chocolate pear pudding - irresistible indulgence!
Ingredients:
  • 215.00 gm caster sugar
  • 6 small firm ripe pears, peeled
  • 100g butter, chopped
  • 400.00g Brand dark cooking chocolate, chopped
  • 118.80 gm brown sugar
  • 2 Brand free range eggs, lightly beaten
  • 125.00 ml ground pecans
  • 150.00 gm self-raising flour
  • 32.50 gm cocoa powder
  • 252.50 gm cream
  • 4.40 gm vanilla essence
Instructions:
  • Preheat oven to 160C (140C fan-forced) and grease 6 x 1 cup-capacity ovenproof dishes. In a large saucepan, combine caster sugar with 8 cups water over low heat until dissolved. Add pears, bring to a boil, then simmer for 10-15 mins until tender but not mushy. Remove pears from pan, drain, and let them cool.
  • Remove the tops from the pears, slicing them crossways about 5cm from the stalk, and put the tops aside. Remove and discard the cores from the base of the pears. Blend the pear flesh in a food processor until nearly smooth. Measure out 1 cup of puree and save the remainder for later use.
  • In a large saucepan, melt butter, chocolate, pear puree, and brown sugar over low heat. Let it cool slightly. Stir in eggs and pecans until combined. Gently fold in sifted flour and cocoa until just combined. Spoon mixture into prepared dishes and place a pear on top of each dish. It will sink slightly as you nestle it into the mixture.
  • Bake until the top is firm to the touch, about 25-30 minutes.
  • In a small saucepan, melt and smooth out all chocolate sauce ingredients over low heat. Drizzle the sauce over puddings for a decadent finishing touch.
