Elevate white chocolate cookies with a delicious sweet miso twist.
Ingredients:
  • 180g butter, chilled, chopped
  • 36.00 gm white miso paste
  • 220g brown sugar
  • 55g caster sugar
  • 1 egg yolk
  • 160g plain flour
  • 90g rolled oats
  • 8.00 gm baking powder
  • 1 small green pear, cored, finely chopped
  • 60g dried pears, finely chopped
  • 65g choc bits
  • Thinly sliced pear, to serve
Instructions:
  • 1. Preheat the oven to 170°C and line 2 baking trays with baking paper. 2. In a saucepan over high heat, let the butter cook until dark brown for about 2-3 minutes, stirring occasionally. 3. Once browned, transfer the butter to a large heatproof bowl, add the miso paste, and whisk until well combined. Allow the mixture to cool completely.
  • Pour the sugar into the butter mixture and blend until light and creamy using an electric mixer. Mix in the egg and egg yolk until well combined and slightly lighter in color. Combine the flour, oats, and baking powder into the mixture. Gently fold in the chopped pear, dried pear, and chocolate bits until well mixed.
  • Form the mixture into 1/4-cup sized balls, gently press to slightly flatten. Add 1 pear slice on top of each ball. Arrange on lined trays, ensuring they are about 5cm apart.
  • Bake for 20-25 minutes, swapping trays halfway through, until golden brown. Let cool on trays for 10 minutes, then transfer to wire rack to cool completely. Store in airtight container at room temperature for up to 3 days.
