Indulge in a guilt-free sweet pear and white cheddar quick bread. For optimal flavor, let it sit overnight before serving.
Ingredients:
  • 1 1/3 cups Gold Medal™ all-purpose flour
  • 1/2 cup Gold Medal™ whole wheat flour
  • 1/4 cup flaxseed meal or toasted wheat germ
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 cups shredded pears
  • 1/2 cup sugar
  • 1/2 cup refrigerated or frozen egg product, thawed, or 2 eggs, lightly beaten
  • 1/3 cup oil
  • 1/4 cup low-fat buttermilk or sour milk
  • 1/4 cup honey
  • 1 teaspoon vanilla
  • 1/2 cup shredded white cheddar cheese (2 ounces)
Instructions:
  • 1. Preheat the oven to 350°F and generously grease the bottom and sides of a 9x5x3-inch loaf pan or two 7x3 1/2x2-inch loaf pans. Set aside. 2. In a large bowl, combine all-purpose flour, whole wheat flour, flaxseed meal, baking powder, and salt. Create a well in the center of the mixture and set aside.
  • Combine pears, sugar, egg product, oil, buttermilk, honey, and vanilla in a medium bowl. Gently mix the pear mixture with the flour mixture until just combined (batter should be lumpy). Fold in cheese. Transfer batter to the prepared pan and bake for 55 to 60 minutes (45 to 50 minutes for smaller pans) until a toothpick inserted near the center comes out clean.
  • Allow the bread to cool in the pan on a wire rack for 10 minutes, then remove from the pan and cool completely on the wire rack. For optimal flavor and texture, wrap and store overnight before slicing.
