Chunky Pear Butter with a Lemon Twist

Delicious pear and lemon liqueur butter spread. Perfect on toast or biscuits. For a lighter color, use white sugar instead of brown.
Ingredients:
  • 5 pounds pears - peeled, cored and diced
  • 0.5 cup water
  • 2 cups packed brown sugar
  • 2 teaspoons grated lemon zest
  • 0.25 teaspoon ground nutmeg
  • 2 tablespoons limoncello liqueur
Instructions:
  • In a large pot or saucepan, gently simmer the pears with water until soft, approximately 30 minutes. Meanwhile, sterilize and keep six half-pint jars warm.
  • Process the pears in a food processor to your preferred consistency. Add brown sugar, lemon zest, nutmeg, almond extract, and limoncello to the pan. Simmer over medium-low heat, stirring occasionally, until the mixture thickens to a butter-like consistency, approximately 1 hour.
  • Fill the sterile jars with the pear butter, leaving a 1/4 inch space at the top. Seal with the lids and rings, then place in a hot water bath for 10 minutes to seal.
