Choc-chunk pear and raspberry cobbler

Bake a quick and delicious chocolate, pear, and raspberry cobbler in just 15 minutes!
Ingredients:
  • 825g can pear halves in syrup, drained, halved
  • 10.00 gm cornflour
  • 250g fresh raspberries
  • 90.00 gm firmly packed brown sugar
  • 2.50 gm mixed spice
  • 225.00 gm self-raising flour
  • 100g dark chocolate (70% cocoa), chopped
  • 441.88 gm thickened cream
Instructions:
  • Preheat the oven to 200C/180C fan forced. In a bowl, combine pear, cornflour, 200g raspberries, 1/4 cup sugar, and 1/2 tsp mixed spice. Gently stir to mix. Transfer two-thirds of the mixture into a 1.5L (6 cup) baking dish or ovenproof frying pan.
  • In a bowl, mix self-raising flour, 80g of chocolate, 1/4 cup sugar, and 1/2 tsp mixed spice. Create a well in the center and gradually add the cream while stirring until a wet dough forms.
  • Dollop the dough over the pear mixture, then layer the remaining pears around the edge of the pan. Sprinkle with raspberries and the rest of the chocolate.
  • Bake until beautifully golden and bubbling, for 45-50 minutes. Allow it to rest for 15 minutes. Serve with your choice of ice cream, cream, or custard.
