Indulge in gluten-free walnut chocolate chunk cookies!
Ingredients:
  • 172.50 gm walnuts
  • 125g butter, softened
  • 53.75 gm caster sugar
  • 45.00 gm firmly packed brown sugar
  • 1 egg
  • 42.90 gm rice flour
  • 125.00 ml gluten-free plain flour
  • 150g dark chocolate, roughly chopped
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and prepare 2 baking trays by lining them with baking paper.
  • Finely grind 1 cup of walnuts, then roughly chop the rest.
  • In an electric mixer, cream together butter and sugars until light and fluffy. Mix in egg until well combined. Fold in flours, chocolate, and walnuts.
  • Roll mixture into level tablespoon-sized balls, placing them 5cm apart on prepared trays. Gently flatten and bake for 12 to 15 minutes until light golden. Cool on trays for 5 minutes, then transfer to a wire rack to cool completely before serving.
