Indulgent dark chocolate chunks and rich walnuts star in this classic cookie.
Ingredients:
  • 125g butter, softened
  • 100g (1/2 cup, firmly packed) brown sugar
  • 1 egg, at room temperature
  • 225g (1 1/2 cups) plain flour
  • 200g good-quality dark cooking chocolate, coarsely chopped
  • 150g (1 1/2 cups) walnut halves, coarsely chopped
Instructions:
  • Preheat your oven to 180°C and line two baking trays with non-stick baking paper.
  • In a medium bowl, cream together butter and sugar using an electric beater until smooth. Add the egg and mix well. Fold in the flour with a wooden spoon until fully incorporated. Gently mix in the chocolate and walnuts until evenly distributed.
  • Roll the cookie mixture into tablespoon-sized balls using your hands. Place the balls 3cm apart on prepared trays. Gently flatten each ball with a fork. Bake in a preheated oven for 20 minutes or until light golden, remembering to swap the trays halfway through cooking. Let the cookies cool on the trays for 5 minutes before transferring them to a wire rack to cool completely.
