Cherry, walnut and choc-chunk brownies

Create delicious cherry chocolate brownies with just 8 simple ingredients.
Ingredients:
  • 250g butter, chopped
  • 300g dark chocolate, roughly chopped
  • 430.00 gm caster sugar
  • 4 eggs
  • 500.00 ml plain flour
  • 42.90 gm cocoa powder
  • 250.00 ml frozen cherries, thawed, quartered
  • 57.50 gm walnuts, roughly chopped
Instructions:
  • Preheat your oven to 190C/170C fan-forced. Grease a 20cm x 30cm lamington pan and line the base and sides with baking paper.
  • In a saucepan over medium heat, melt butter and 200g of chocolate together until smooth, stirring occasionally. Let cool for 10 minutes before using.
  • Gently blend sugar and eggs until incorporated. Mix in flour and cocoa until smooth.
  • After drying the cherries, simply mix them with walnuts and additional chocolate into the chocolate mixture. Gently fold everything together. Transfer the mixture into the prepared pan and bake for 40 minutes or until it's slightly firm to the touch. Let it cool in the pan before cutting into squares and serving.
