Cottage cheese and walnut fritters with roasted cherry truss tomatoes

Delicious fritters paired with fresh truss tomatoes make a light and nutritious meal.
Ingredients:
  • 500g Cottage Cheese
  • 50g (1/2 cup) Quick Cooking Oats
  • 1 tsp dried mixed herbs
  • 30g (1/4 cup) walnut halves, coarsely chopped
  • 1 egg white
  • 70g (3/4 cup) cornflake crumbs
  • Extra virgin olive oil spray
  • 2 x 240g pkts cherry truss tomatoes
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays with non-stick baking paper.
  • In a large bowl, mix together cottage cheese, oats, herbs, walnuts, egg white, 25g (1/4 cup) of cornflake crumbs, and season with pepper.
  • Spread the remaining cornflake crumbs on a large plate. Take a generous tablespoon of the cottage cheese mixture and shape it into a ball. Flatten it slightly to create a patty shape. Carefully coat it with the cornflake crumbs. Transfer to a lined tray. Repeat this process with the rest of the cottage cheese mixture and cornflake crumbs.
  • Coat the patties generously with olive oil spray and bake in the oven until beautifully golden, about 15 minutes. Let them cool slightly before serving.
  • Cut the tomatoes into 6 portions using scissors, keeping the stems intact. Place on the lined tray and bake in the oven for about 15 minutes or until the tomatoes soften slightly. Serve alongside the fritters.
