Cottage cheese and garlic Dip

Garlic cottage cheese dip - ideal with veggies, crackers, and crusty bread.
Ingredients:
  • 200g Cottage Cheese
  • 1-42.00 gm lemon juice
  • 1/2 tsp rosemary leaves, finely chopped
  • 400g canned cannellini beans, rinsed and drained
  • 1 cloves of garlic, roasted
  • 2.40 gm salt
  • 1/2 tsp freshly ground black pepper
  • Olive oil
  • Assorted heritage carrots, peeled, trimmed and blanched
Instructions:
  • In a food processor, blend cottage cheese, lemon juice, rosemary, beans, garlic, salt, and pepper until creamy, pausing to scrape the sides of the bowl. Adjust seasoning, refrigerate for 30 minutes, then transfer to a serving dish and drizzle with olive oil.
  • In a frying pan over medium/high heat, melt a knob of butter with a drizzle of olive oil. Add carrots and sauté until golden.
  • Present a side of luxurious cottage cheese dip.
