Elevate a classic cafe dish with indulgent milk chocolate chunks.
Ingredients:
  • 340g (2 1/4 cups) plain flour
  • 5.00 gm ground cinnamon
  • 8.00 gm baking powder
  • 0.63 gm bicarbonate of soda
  • Pinch of salt
  • 155g (3/4 cup, firmly packed) caster sugar
  • 250ml (1 cup) light olive oil
  • 3 eggs, lightly whisked
  • 4.40 gm vanilla extract
  • 650.00 gm mashed banana
  • 190.00 gm Milk Chocolate Melts
  • 100g dark or milk chocolate, coarsely chopped
Instructions:
  • Preheat your oven to 180C. Grease a 7cm-deep, 10 x 20cm loaf pan with oil and line it with baking paper, ensuring the paper overhangs the sides.
  • In a large bowl, combine sifted flour, cinnamon, baking powder, bicarbonate of soda, and salt. Add sugar and make a well in the center. Pour in oil, egg, and vanilla. Mix until just combined, then gently fold in mashed banana until just incorporated.
  • Follow the package directions to melt 1 cup of milk chocolate melts, then mix into the banana bread mixture. Transfer the mixture into the prepared pan, smooth the surface, and sprinkle 100g of coarsely chopped dark or milk chocolate on top. Bake for 1 hour and 10 minutes until a skewer inserted in the middle comes out clean.
