Healthier version of classic treat with rich dark chocolate chunks.
Ingredients:
  • 2 eggs
  • 240g (1 1/2 cups) wholemeal spelt flour
  • 35g (1/3 cup) raw cacao powder
  • 8.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 50g (1/2 cup) rolled oats
  • 40g dark chocolate (70% cocoa), finely chopped
  • 150ml maple syrup
  • 80ml (1/3 cup) buttermilk
  • 80ml (1/3 cup) coconut oil
  • 4.40 gm vanilla extract
  • 480g (1 3/4 cups) mashed ripe banana
Instructions:
  • Preheat your oven to 180C/160C fan forced. Grease and line an 11 x 21cm loaf pan with parchment paper, leaving some overhang on the sides.
  • Sift together flour, cacao powder, baking powder, and bicarbonate of soda into a large bowl, reserving 1 tablespoon of oats. Add the rest of the oats and chocolate to the bowl, stirring to combine. Create a well in the center of the mixture.
  • Combine maple syrup, buttermilk, oil, eggs, and vanilla extract in a jug. Pour this mixture along with bananas into the dry ingredients. Stir until well combined. Transfer the batter into a prepared pan, sprinkle with reserved oats. Bake for 1 hour and 15 minutes or until a skewer inserted in the center comes out clean. Allow cooling in the pan for 10 minutes, then transfer to a wire rack. Serve warm or at room temperature.
