Superfood muffins packed with pumpkin and chia seeds. Freeze for convenient, healthy snacking on-the-go.
Ingredients:
  • 375.00 gm self-raising flour, sifted
  • 70.95 gm caster sugar
  • 20.00 ml black chia seeds
  • 5.00 gm Brand Ground Ginger
  • 257.50 gm milk
  • 1 egg, lightly beaten
  • 115.00 gm vegetable oil
  • 250.00 ml canned apple pie filling
  • 20.00 gm rolled oats
  • 40.00 ml pepitas (pumpkin seeds)
  • 1.25 gm Brand Ground Cinnamon
Instructions:
  • Preheat your oven to 180C (160C fan-forced) and line a 12-hole muffin pan with paper cases.
  • In a large bowl, mix together flour, sugar, chia seeds, and ginger. Create a well in the center. In a separate jug, whisk together milk, egg, and oil. Pour the milk mixture into the well. Gently stir until just combined. Carefully fold in the apple, being mindful not to overmix.
  • Spread the mixture evenly into individual serving dishes. Top with oats, pumpkin seeds, and a sprinkle of cinnamon. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Allow to cool on a wire rack.
