Choc mousse with pine nuts & pomegranate

Indulge guilt-free with these healthier sweet treats.
Ingredients:
  • 2 gelatine leaves
  • 80ml (1/3 cup) low fat milk
  • 2 large fresh mint sprigs
  • 40.00 ml raw cacao powder
  • 3 eggs, separated
  • 55g (1/4 cup) caster sugar
  • Pomegranate molasses, to serve (optional)
  • 1/2 pomegranate, seeds removed
  • 20.00 ml toasted pine nuts
  • Baby mint leaves, to serve
Instructions:
  • Soak the gelatine in a bowl of cold water for 5 minutes. Meanwhile, heat the milk and mint in a saucepan until it almost boils. Let it sit for 2 minutes to infuse, then strain the mixture into a bowl and discard the mint. Squeeze out excess water from the gelatine and whisk it into the warm milk. Stir in the cacao until dissolved. Allow the mixture to cool for 12 minutes.
  • Using electric beaters, whip the egg whites until soft peaks form. Slowly incorporate the sugar, making sure to beat well after each addition until fully dissolved. On low speed, add the egg yolks one by one, ensuring each is well incorporated. Slowly pour in the cooled chocolate mixture while beating, until just combined. Divide the mixture among 4 glasses and refrigerate for 2 hours until set. Serve topped with pomegranate molasses, if desired, along with pomegranate seeds, pine nuts, and baby mint.
