Vegan choc-avo mousse

Indulge in a luxurious chocolate mousse made with aquafaba and avocado, perfect for a guilt-free, gluten-free, and dairy-free treat.
Ingredients:
  • 100g dairy-free dark chocolate (70% cocoa)
  • 2 ripe avocados
  • 120g (2/3 cup) coconut sugar
  • 50g (1/2 cup) raw cacao powder
  • 2 tsp vanilla bean paste
  • 400g can chickpeas, drained, aquafaba (chickpea liquid) reserved (reserve chickpeas for another use)
  • Pinch of cream of tartar
  • Fresh raspberries, to serve
  • Roasted hazelnuts, chopped, to serve
Instructions:
  • Gently melt the chocolate in a heatproof bowl placed over simmering water, ensuring the bowl doesn't touch the water, until smooth, for 1-2 minutes. Allow it to cool for 5 minutes.
  • In a food processor, blend the avocado, sugar, cacao, and vanilla until smooth. Slowly pour in the melted chocolate and blend until mixture is light and fluffy. Transfer the mixture to a large bowl.
  • Whip aquafaba and cream of tartar until firm peaks form using electric beaters. Gently fold half of the whipped aquafaba into the chocolate mixture until almost combined. Fold in the rest of the aquafaba until smooth and just combined.
  • Transfer the mixture into individual serving glasses and chill in the freezer for 8-10 minutes. Garnish with raspberries and hazelnuts before serving.
