"Delicious vegan chocolate chip cookies made with coconut sugar and spelt flour for a satisfying crunch."
Ingredients:
  • 110g Nuttelex vegan olive oil spread
  • 150g (3/4 cup) coconut sugar
  • 4.40 gm pure vanilla extract
  • 235g (1 1/2 cups) wholemeal spelt flour
  • 2.50 gm ground cinnamon
  • 60ml (1/4 cup) unsweetened almond milk
  • 80g vegan milk chocolate, chopped
Instructions:
  • Preheat the oven to 180C/160C fan forced. Line a large baking tray with baking paper. In a bowl, use electric beaters to whip together the spread, sugar, and vanilla until pale and creamy.
  • Combine the flour and cinnamon, then mix it into the spread. Pour in the milk and chocolate, stirring until a soft sticky dough forms.
  • Shape tablespoonfuls of the mixture into balls using dampened hands. Arrange them on the prepared tray, leaving 5cm of space between each. Press down firmly with a fork. Bake for 12 minutes or until golden brown. Cool completely on a wire rack.
