Easy vegan choc banana muffins

Healthy muffins with cacao nibs, ideal for lunchboxes or tea time.
Ingredients:
  • 300.00 gm self-raising flour
  • 118.80 gm brown sugar
  • 82.50 ml cacao nibs
  • 260.00 gm mashed banana (see notes)
  • 115.00 gm sunflower oil
  • 4.40 gm vanilla extract
  • 169.95 gm unsweetened oat milk
  • 2.50 gm bicarbonate of soda
  • 20.00 ml apple cider vinegar
Instructions:
  • Preheat your oven to 180C/160C fan-forced and grease a 12-hole muffin pan (1/3-cup-capacity).
  • In a large bowl, combine flour, sugar, and 1/4 cup cacao nibs. Create a well in the center. Without stirring, add banana, oil, and vanilla into the well. In a separate jug, mix milk with bicarbonate of soda and vinegar until frothy. Pour the mixture into the well. Stir until just combined.
  • Evenly distribute the mixture into the prepared pan holes and sprinkle with the remaining cacao nibs. Bake for 18 to 20 minutes until golden and firm to the touch. Let it rest in the pan for 5 minutes before transferring to a wire rack to cool. Serve and enjoy!
