Vegan gingerbread cookies with coconut oil, molasses, and spices - perfect festive treat for all!
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup coconut oil, at room temperature
  • 0.33333334326744 cup molasses
  • 0.25 cup white sugar
  • 1 teaspoon vanilla extract
Instructions:
  • In a bowl, combine flour, baking powder, cinnamon, baking soda, ginger, allspice, and salt by sifting them together.
  • In a separate bowl, use an electric mixer on medium speed to blend coconut oil, molasses, and sugar until fully combined; then add vanilla extract. Mix in flour mixture until a sticky dough forms, approximately 2 minutes. Wrap the dough in plastic wrap and refrigerate for 2 hours before proceeding.
  • Preheat the oven to 350 degrees F (175 degrees C and prepare 2 baking sheets with parchment paper.
  • On a floured surface, roll out the dough to a 1/4-inch thickness. Use cookie cutters to cut out desired shapes, dipping them in flour to prevent sticking, and place the shapes on the baking sheets.
  • Bake in the preheated oven until set, for about 8 to 10 minutes. Then, cool briefly on the baking sheets before moving to a wire rack to cool completely.
