Irresistible vegan waffles made with a special egg replacer that will make you forget about traditional waffles.
Ingredients:
  • 4 tablespoons dry vegan egg replacer (such as VeganEgg®)
  • 0.5 cup ice cold water
  • 1.75 cups almond milk
  • 1.75 cups all-purpose flour
  • 0.5 cup almond flour
  • 0.5 cup vegetable oil
  • 1 tablespoon baking powder
  • 1 tablespoon white sugar
  • 2 teaspoons vanilla extract
  • nonstick cooking spray
Instructions:
  • Heat up the waffle iron as per the manufacturer's guidance.
  • In a blender, blend egg replacer and water until smooth. Add almond milk, all-purpose flour, almond flour, oil, baking powder, sugar, and vanilla extract; blend on low until smooth and lump-free.
  • Grease the hot waffle iron with cooking spray, then ladle 1/4 cup of batter onto it. Cook until the waffle turns golden brown and the steam dissipates, approximately 5 minutes.
