Wholesome vegan soft serve made with ripe bananas and creamy coconut yogurt for a guilt-free treat.
Ingredients:
  • 60g dark chocolate, melted
  • 2 large bananas, peeled, frozen
  • 400g coconut yoghurt
  • 125g (1 cup) frozen raspberries
  • 35g (1/3 cup) dark cocoa powder
  • 27.00 gm maple syrup
  • Fresh raspberries, to serve
  • Chopped pistachios, to serve
Instructions:
  • Prepare a baking tray with a layer of baking paper. Carefully drizzle the melted chocolate in an elegant lattice design on top. Chill in the refrigerator for 5-10 minutes until firm.
  • Combine frozen bananas and yogurt in a high-powered blender or food processor and blend until nearly smooth. Incorporate frozen raspberries, cocoa, and maple syrup, and blend until a creamy consistency is achieved.
  • Divide the mixture among serving glasses or bowls. Break the chocolate lattice into shards and position them on top. Garnish with fresh raspberries and pistachios before serving.
