Elevate your salad game with a spin on the classic spinach and mandarin orange combo. Tossed with crispy bacon, crunchy almonds, and a warm, flavorful homemade dressing. Ideal for wowing your guests.
Ingredients:
  • 0.5 cup red wine vinegar
  • 1.5 tablespoons water
  • 1.5 tablespoons butter
  • 0.5 teaspoon salt
  • 1 egg, beaten
  • 1 (10 ounce) package baby spinach
  • 1 (6 ounce) package sliced fresh mushrooms
  • 1 (15 ounce) can mandarin oranges, drained
  • 0.33333334326744 cup toasted slivered almonds
  • 4 slices cooked bacon, crumbled
  • 0.25 red onion, sliced and separated into rings
  • 0.25 cup croutons, or as desired
Instructions:
  • Combine vinegar, sugar, water, butter, and salt in a saucepan. Bring to a boil and cook, stirring until sugar dissolves and mixture bubbles for about 1 minute. Remove from heat and allow to cool to room temperature for about 1 hour.
  • Whisk the egg into the dressing and simmer the mixture over low heat until it thickens, which should take 5 to 10 minutes.
  • Toss together spinach, mushrooms, mandarin oranges, almonds, bacon, red onion rings, and croutons in a large bowl. Drizzle dressing and mix well.
