Spinach salad with warm walnut dressing

Ingredients:
  • 400g baby spinach leaves, trimmed, washed, dried
  • 125ml (1/2 cup) olive oil
  • 200g walnut pieces, roughly chopped
  • 42.00 gm fresh lemon juice
Instructions:
  • Fill a spacious heatproof bowl with spinach leaves.
  • Heat oil in a medium frying pan over medium-high heat, then toss walnuts for 4-5 minutes until hot. Remove from heat and stir in lemon juice for warm walnut dressing.
  • Drizzle the dressing onto the spinach, generously season with salt and freshly ground black pepper, and delicately toss to mix. Serve promptly.
