Elegant spinach salad with warm pomegranate dressing, ready in just 30 minutes.
Ingredients:
  • 1 cup pomegranate juice
  • 1/2 cup honey
  • 2 tablespoons sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/3 cup olive oil
  • Salt and pepper to taste
  • 1 bag (9 oz) fresh spinach
  • 1/2 cup sliced red onion
  • 4 hard-cooked eggs, sliced
  • 1/2 lb bacon, crisply cooked, crumbled
  • 1 cup cherry tomatoes
  • 1/2 cup fresh pomegranate seeds, if desired
Instructions:
  • In a 1-quart saucepan, combine pomegranate juice, honey, and sugar. Heat over medium-high heat until the mixture simmers for about 5 minutes. Stir constantly until the sugar dissolves and the sauce slightly thickens.
  • Transfer the mixture to a heatproof glass bowl. Stir in mustard, soy sauce, Italian seasoning, and garlic powder. Gradually whisk in olive oil until smooth. Season with salt and pepper to taste. Set aside.
  • In a large salad bowl, combine spinach with onion, egg slices, bacon, and tomatoes. Drizzle warm dressing over the salad and sprinkle with pomegranate seeds. Serve promptly.
