Avocado, Apple and Bacon Salad with Tangy Avocado Dressing

Delicious salad with crisp apple, smooth avocado, and savory bacon - a must-have all year!
Ingredients:
  • 2 boneless skinless chicken breasts (about 4 oz each)
  • 1 carton (32 oz) Progresso™ reduced-sodium chicken broth (4 cups)
  • 1 avocado
  • 2 cloves garlic, finely chopped
  • 6 tablespoons fresh lemon juice (2 medium)
  • 2 tablespoons water
  • 6 cups spring mix salad greens
  • 2 teaspoons finely chopped fresh thyme
  • 2 green apples (such as Granny Smith), cut into julienne pieces (1 1/2x1/4x1/4 inch)
  • 1 avocado, pitted, peeled and sliced
  • 1/2 bulb fennel, shaved
  • 4 slices turkey bacon, cooked, crumbled
Instructions:
  • In a deep 8-inch skillet, arrange the chicken in a single layer. Pour in the broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes. Remove from heat and let it stand for an additional 10 minutes.
  • In a food processor or blender, blend 1 avocado, garlic, and lemon juice until creamy. While blending, slowly pour in water and oil until the dressing is smooth and well combined.
  • Transfer the chicken onto a plate; use 2 forks to shred the chicken.
  • Combine salad greens, thyme, and half of the dressing in a large bowl. Add shredded chicken, apples, 1 avocado, fennel, and turkey bacon. Drizzle with the remaining dressing and serve the salad on 4 plates.
