Apple and goat’s cheese autumn salad recipe

Apple, goat cheese, and pomegranate salad - a fresh and delightful side dish.
Ingredients:
  • 250.00 ml watercress sprigs
  • 60g pkt Baby Rocket
  • 1/2 bunch purple kale, stems trimmed, leaves coarsely torn
  • 125.00 ml mint sprigs
  • 2 red apples, cored, thinly sliced
  • 20.00 ml pepitas (pumpkin seeds)
  • 80g pomegranate
  • 150g marinated goat’s cheese, crumbled
  • 60ml avocado
  • 40.00 ml white wine vinegar
  • 11.80 gm Dijon mustard
Instructions:
  • Place watercress, rocket, kale, mint, and apple beautifully on a platter. Sprinkle with pepitas, pomegranate seeds, and crumbled goat’s cheese before serving.
  • Combine oil, vinegar, honey, and mustard in a screw-top jar. Shake vigorously until well mixed. Season to taste, then drizzle over the salad and serve right away.
