Creamy corn and chive mash

Elevate mashed potatoes with sweet corn, sour cream, and fresh chives for a flavorful twist.
Ingredients:
  • 600g sebago potatoes, peeled, roughly chopped
  • 77.55 gm sour cream
  • 310g can creamed corn
  • 40.00 ml chopped fresh chives
  • Extra chopped fresh chives, to serve
Instructions:
  • In a large saucepan, add the potato and cover with cold water. Bring to a boil over high heat and cook for 10-15 minutes until tender. Drain thoroughly.
  • Place the potato back in the pan over medium heat and toss for 1 minute until any extra liquid has evaporated. Remove from heat and mash until smooth.
  • Combine sour cream, creamed corn, and chives, and season with salt and pepper. Cook over low heat for 1 to 2 minutes until heated through, stirring occasionally. Garnish with additional chives before serving.
