Feed a crowd with this creamy and comforting sweet corn side dish, packed with crispy bacon and flavorful cream cheese. Only 10 minutes of prep for a set-it-and-forget-it dish that serves 12!
Ingredients:
  • 3 bags (12 oz each) frozen whole kernel corn, thawed (about 6 cups)
  • 1 medium red bell pepper, chopped (3/4 cup)
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 6 slices bacon, cooked and crumbled
  • 1 container (8 oz) chive-and-onion cream cheese
Instructions:
  • Grease a 4 1/2 to 5-quart slow cooker with cooking spray.
  • Combine the corn, bell pepper, milk, melted butter, sugar, salt, and half of the bacon in a slow cooker. Save the remaining bacon in the refrigerator for later use.
  • Cover and cook on High heat for 1 1/2 to 2 hours.
  • Add creamy and rich cream cheese into the dish. Continue cooking on High heat for an additional 10 minutes. Stir thoroughly, then top with the remaining crispy bacon. The corn can be kept warm on Low heat for up to 1 hour.
