Slow cooker creamy bacon corn: Deliciously simple make-ahead side dish.
Ingredients:
  • 4 slices bacon
  • cooking spray
  • 4.5 cups whole kernel corn
  • 0.5 red bell pepper, chopped
  • 0.5 cup half-and-half
  • 0.25 cup unsalted butter, melted
  • 1 teaspoon white sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 (8 ounce) container chive and onion cream cheese
Instructions:
  • Cook the bacon in a large skillet over medium-high heat until evenly browned, turning occasionally for about 10 minutes. Drain on paper towels and crumble once cooled.
  • Generously spray cooking oil inside a 4-quart slow cooker.
  • In the slow cooker, mix together corn, red bell pepper, half-and-half, butter, sugar, salt, black pepper, and half the crumbled bacon until well combined.
  • Cook on High for 2-2 1/2 hours until beautifully tender and flavorful.
  • Incorporate the cream cheese into the corn mixture and cook until the cheese is melted, approximately 10 minutes. Stir thoroughly and garnish with the remaining bacon before serving.
