Delicious creamy potato soup made with leftover mashed potatoes, milk, and chicken broth. Use leeks instead of onions, garnish with chives.
Ingredients:
  • 1 tablespoon butter
  • 1 large onion, chopped
  • 6 cups mashed cooked potatoes
  • 2 (14.5 ounce) cans chicken broth
  • 0.5 cup milk
Instructions:
  • In a medium soup pot, gently melt butter and cook onions until tender. Incorporate the mashed potatoes, then gradually pour in the chicken broth. While stirring, pour in milk (adjust amount for desired creaminess). Heat mixture until warmed through, then season with salt and pepper to taste.
