Indulge in a comforting soup with a kick, packed with green chilies, sharp Cheddar cheese, and shredded potatoes for a hearty meal.
Ingredients:
  • 2 large potatoes, peeled and shredded
  • 5 stalks celery, sliced
  • 1 medium sweet onion, chopped
  • 1 (8 ounce) package shredded sharp Cheddar cheese, divided
  • 1 (7 ounce) can mild green chiles
  • 1 quart water, or as needed to cover
  • 1 (12 fluid ounce) can evaporated milk
  • 1 tablespoon chicken bouillon granules
  • 0.5 cup shredded sharp Cheddar cheese, or to taste
Instructions:
  • In a soup pot, mix potatoes, celery, onion, half of the Cheddar cheese, green chiles, and pepper. Cover with water, bring to a boil with the lid on. Simmer until celery is tender, about 30-40 minutes. Add evaporated milk, butter, and bouillon. Adjust seasoning to taste before serving.
  • Serve in bowls and sprinkle with the rest of the Cheddar cheese.
