Best Potato Soup

Indulgent loaded potato soup ready in just 40 minutes with bacon, ham, sour cream, Cheddar cheese, and green onions.
Ingredients:
  • 1 package (12 oz) bacon
  • 1 1/2 cups chopped onion
  • 6 cups Progresso™ chicken broth (from two 32-oz cartons)
  • 2 lb baking potatoes, peeled, cubed
  • 2/3 cup butter
  • 3/4 cup Gold Medal™ all-purpose flour
  • 4 cups milk
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 1 cup diced cooked ham
  • 1 container (8 oz) sour cream
  • 2 1/2 cups shredded sharp Cheddar cheese (10 oz)
  • 3/4 cup sliced green onions
Instructions:
  • Cook the bacon in a 12-inch skillet over medium heat until crisp, about 6 to 7 minutes. Drain on paper towels, crumble, and set aside. Keep 2 tablespoons of drippings in the skillet and cook the onion over medium-high heat for about 6 minutes, or until almost tender.
  • Combine onions, broth, and potatoes in a 6-quart Dutch oven. Bring to a boil, then simmer for 10 minutes until the potatoes are very tender.
  • In the same skillet, gently melt butter over low heat. Whisk in flour until smooth, cooking and stirring for 1 minute. Slowly pour in 2 cups of milk. Combine milk mixture with potato mixture. Then, add the remaining 2 cups of milk, salt, and pepper. Cook over medium heat, whisking constantly until the mixture thickens and bubbles.
  • Combine ham, half of the bacon, sour cream, 2 cups of cheese, and 1/2 cup green onions. Heat until cheese is melted. Sprinkle remaining bacon, 1/2 cup cheese, and 1/4 cup green onions on top of each serving.
