Potato Chowder Soup

Cozy up with a comforting potato and corn chowder, perfect for a winter day. Best served in a bread bowl.
Ingredients:
  • 2 cups peeled and diced potatoes
  • 0.5 cup diced carrots
  • 0.5 cup diced celery
  • 0.25 cup chopped onion
  • 1 teaspoon salt
  • 4 cups water, or as needed to cover
  • 2 cups milk
  • 0.25 cup butter
  • 2 (15 ounce) cans whole kernel corn, drained
  • 2.5 cups shredded Cheddar cheese
Instructions:
  • In a large pot, combine potatoes, carrots, celery, onion, and salt. Add enough water to cover the ingredients. Bring to a boil over medium-high heat, then reduce heat and simmer until potatoes are tender, about 20 minutes. Do not drain.
  • As the vegetables near completion, gently blend milk, butter, and flour in a small saucepan over medium-low heat. Stir continuously until the butter is melted and the mixture is velvety and thick, for about 5 to 10 minutes.
  • Combine the hot milk mixture with the cooked vegetables. Stir in the corn and Cheddar until the cheese melts, approximately 3 minutes.
