Garlic Potato-Topped Italian Meatloaf

Savory meatloaf with garlic mashed potatoes - a hearty delight for meat-and-potato fans!
Ingredients:
  • 2 eggs
  • 1 jar (14 oz) tomato pasta sauce
  • 1 cup Progresso™ Italian style bread crumbs
  • 1 large onion, finely chopped (1 cup)
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 2 lb extra lean (at least 90%) ground beef
  • 1 pouch (4.7 oz) Betty Crocker™ roasted garlic mashed potatoes
  • Water, milk and butter as called for on potato mix pouch
  • 1/2 cup grated Parmesan cheese
Instructions:
  • - Preheat the oven to 375°F and generously spray a 13x9-inch glass baking dish with cooking spray. - In a large bowl, whisk the eggs and then combine them with pasta sauce, bread crumbs, onions, Italian seasoning, salt, and beef until everything is well mixed. - Spread the mixture evenly in the prepared baking dish.
  • Bake until a meat thermometer inserted in center reads 160°F, about 40 to 50 minutes.
  • Prepare the potatoes according to the package instructions, adding milk, water, and butter for extra creaminess.
  • Top the meatloaf with a layer of creamy mashed potatoes and a generous sprinkle of cheese. Bake for an additional 10 to 15 minutes until the top is nicely golden. Allow it to rest for 5 minutes before slicing and serving.
