Pastrami potato patties with fried egg

Turn leftover potatoes into irresistible patties guaranteed to be a family favorite!
Ingredients:
  • 375.00 ml (about 275g) cooked potato
  • 125g sliced pastrami, chopped
  • 23.40 gm honey wholegrain mustard
  • 125.00 ml fresh breadcrumbs
  • 3 green onions, thinly sliced
  • 125.00 ml plain flour
  • 56.88 gm olive oil
  • 4 eggs
  • 125.00 gm tomato chutney
  • Mixed salad leaves, to serve
Instructions:
  • In a large bowl, gently mash the cooked potato. Mix in pastrami, wholegrain mustard, breadcrumbs, and green onion until well combined. Shape 1/4 cup of the mixture into 8 patties. Lightly coat the patties in flour, shaking off any excess.
  • In a large frying pan over medium heat, heat 2 tablespoons of oil. Cook the patties in batches for 5 to 7 minutes until they are golden and warmed through. Transfer them to a plate and cover with foil to keep warm.
  • In a hot pan with remaining oil, gently crack in the eggs. Cook for 3 minutes, or until they reach your desired doneness. Serve the potato patties alongside the eggs, accompanied by chutney and salad.
