Pastrami, potato and mustard rosti

Whip up a simple and delicious potato rosti using pantry staples for quick meals anytime.
Ingredients:
  • 600g potato
  • 250g sliced pastrami, thinly sliced
  • 35.10 gm wholegrain mustard
  • 62.50 ml finely chopped fresh chives
  • 36.40 gm olive oil
  • Baby rocket, to serve
  • Fruit chutney, to serve
Instructions:
  • In a bowl, mix together the potato, pastrami, mustard, and chives. Season with pepper and stir well to combine.
  • In a large frying pan over medium heat, heat half of the oil. Add 1/4 cup of the potato mixture to the pan and flatten it with a spatula to make a rosti. Cook for 2 minutes on each side until golden brown and cooked through. Transfer to a plate lined with paper towel and cover to keep warm. Repeat with the remaining oil and potato mixture to make more rosti. Serve with rocket and chutney.
