Delicious ham and potato hash- ideal with eggs, and a great way to enjoy leftover ham. Simple and quick to prepare!
Ingredients:
  • 3 tablespoons butter
  • 1 small onion, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 2 medium potatoes, peeled
  • 1 cup finely diced cooked ham
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon dried crumbled thyme
Instructions:
  • Par-cook the potatoes: Boil halved potatoes in simmering water for 10 minutes until slightly undercooked and still firm. Refresh in cold water, drain, and dice into 1/2-inch pieces.
  • In a large cast-iron skillet, melt butter over medium-low to medium heat. Sauté onion until softened, about 4 minutes. Add bell pepper and cook for another 2 minutes.
  • Combine the potatoes, ham, salt, pepper, and thyme with the remaining ingredients, mixing well. Cook the hash until golden brown, approximately 10 minutes, stirring occasionally.
