Make tasty ham and potato hash cups in a muffin pan for a fun kids snack!
Ingredients:
  • 1/2 x 1kg packet frozen potato gems
  • 50g sliced leg ham, finely chopped
  • 2 green onions, finely chopped
  • 62.50 ml chopped fresh flat-leaf parsley leaves, plus extra to serve
  • 125.00 ml plain flour
  • 1.00 gm baking powder
  • 84.98 gm milk
  • 23.40 gm wholegrain mustard
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and generously grease a 12-hole muffin pan with a 1/3-cup capacity.
  • Combine potato gems, ham, onion, parsley, flour, and baking powder in a bowl. Season generously with salt and pepper, stirring until well mixed. In a separate jug, whisk together eggs, milk, and mustard. Pour this mixture into the potato mixture, stirring well to combine.
  • Divide the mixture evenly into the prepared pan holes. Bake for 20-25 minutes until golden brown. Let it rest in the pan for 10 minutes. Gently remove the cups from the pan using a butter knife. Serve topped with extra parsley.
