Create a delicious ham and potato brunch hash with simple seasonings.
Ingredients:
  • 2 tablespoons vegetable or olive oil
  • 1 large onion, cut into 1/2-inch dice
  • 1 pound ham cut into 1/2-inch dice
  • 1 pound potatoes, cut into 1/2-inch dice
  • 0.5 pound sweet potatoes, cut into 1/2-inch dice
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon dried thyme leaves
  • 2 tablespoons chopped fresh parsley
  • Salt and freshly ground black pepper
Instructions:
  • Warm 2 tablespoons of oil in a large non-stick skillet over low heat to prevent sticking. As the skillet warms up, follow the instructions above to prepare the onion and ham. Just before cooking, raise the heat to medium-high. Once the oil begins to shimmer, add the onion and ham. Cook, stirring frequently, until they turn golden brown, about 7 to 8 minutes. While they cook, dice the potatoes and coat them with the rest of the oil. Transfer the ham mixture to a bowl and set aside.
  • Place potatoes in a skillet and cook them until a golden-brown crust forms, stirring occasionally, this should take about 10 minutes. While the potatoes are cooking, combine ketchup, mustard, dried thyme, fresh parsley, and 2 tablespoons of water. If making ahead, spread the cooked potatoes on a large lipped cookie sheet to cool. When ready to serve, reheat the skillet over medium-high heat and recrisp the potatoes. Enjoy!
  • Add the reserved ham mixture back to the skillet and mix in the ketchup mixture. Season with salt and pepper. Cook, stirring often, until the hash is nicely browned, about 5 minutes more.
