Savory bacon and ham baked with crispy hash browns for a delicious breakfast dish.
Ingredients:
  • 8 slices bacon
  • 3/4 cup chopped sweet onion
  • 1/3 cup butter
  • 1 bag (30 oz) frozen country-style shredded hash brown potatoes, thawed
  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 1 container (16 oz) sour cream
  • 2 cups shredded Colby- Monterey Jack cheese blend (8 oz)
  • 1 package (8 oz) diced cooked ham
  • 1 jar (4 oz) diced pimientos, drained
  • 2 tablespoons coarse-grained Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Chopped fresh chives, if desired
Instructions:
  • Preheat the oven to 350°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In a large nonstick skillet, crisp up the bacon until golden and crunchy. Place it on paper towels to drain, then crumble it and set aside. Keep 2 tablespoons of the bacon drippings in the skillet. Saute the onion in the bacon drippings over medium-high heat for about 6 minutes until soft and golden. Lower the heat to medium-low, add the butter and stir until melted. Remove from heat.
  • Remove excess moisture from the potatoes. Combine the potatoes with soup, sour cream, cheese, ham, pimientos, mustard, salt, and pepper in a skillet, stirring to mix well. Transfer the mixture to a baking dish.
  • Bake covered for 45 minutes, then uncover and sprinkle with reserved bacon. Bake for an additional 15 minutes until browned. Allow it to stand for 10 minutes before serving and garnish with chives.
